- 1/4 lb ground turkey
- 1/2 tbsp olive oil
- 1/4 c canned black beans, rinsed and drained
- 1/2 bell pepper, diced
- 1/4 c canned corn
- 8 oz canned crushed tomatoes
- 1/2 c waterÂ
- 1/4 avocado
- Cilantro (optional)
Cooking Directions
1. Heat oil in a pot over medium-high heat. Add turkey and cook and crumble until browned all the way through. Add bell pepper and cook for a few more minutes, until softened. Feel free to add garlic or whatever seasoning you like here.
2. Add black beans, corn, crushed tomatoes, and water. Bring to a boil, and then simmer for 15-20 minutes.
3. Top with cilantro and avocado.
